Meal Plan – Turkey, Quinoa & Pumpkin Pizza!

It was Thanksgiving this weekend here in Canada, which means feasts, family and a long weekend!  We had an amazing dinner on Saturday night…so Sunday and Monday are slated for downtime.  Yahoo!

Meal planning saves me so much time and energy during the week.  Our schedule is very full so it has to be planned out pretty specifically.  Tuesday and Wednesday are always slow cooker days…but depending on the week, there are often 3 or 4 days with my helpful kitchen friend.  Another thing is that we don’t eat a ton of meat.  Usually twice a week, and we buy the best quality we can get our hands on! Will post more about that another day.

My husband is making Turkey soup! My job is cornbread.  The house smells amazing…

Mojo Turkey Tacos
Leftover Turkey for these tacos! We cook a lot with cumin, cilantro, lime etc.  This will be a hit for sure.  I won’t use sour cream, and I use Daiya in place of the cheese.  And of course gluten free tortillas!

Slow Cooker Red Lentil Spinach Coconut Soup with quinoa side salad and leftover corn bread (hoping it’s still ok!)
This soup recipe is a new one for me, but it looks amazing and I can’t wait to try.  I hope it can be added into the meal rotation!  A year ago I never would have imagined choosing a recipe like this.  Ever grateful for steps out of my comfort zone.
Quinoa Side Salad
No recipe to follow here. I just have cooked quinoa on hand, I cut up veggies, tear up whatever greens we have (spinach, romaine, kale etc.) and throw it all together.  Everyone tops with their fave dressing.  Easy peasy.

Slow Cooker Gingered Beef & Vegetables with Brown Rice
Tried and true.  I use green onions in place of scallions, gluten free Tamari in replace of soya sauce, and gf beef boullian.  It’s difficult to find frozen sugar snap peas in my City! I’m not giving up, but until I find them I just use an Asian Style mix.

Crispy Quinoa Bites with Marinara Sauce
Family favourite.  My kids prefer these in mini muffin tins.  Ah, who am I do I!  I use wild rice and regular onions.  You can always use regular cheese if you prefer!
Marinara Sauce - Once I made this amazing sauce I coudn’t beleive I bought it for so long! Quick and delish.
2x 14 oz can stewed tomatoes
1 6oz can tomato paste
small handful fresh parsley
2 cloves garlic
a couple of pinches dried oregano
salt & pepper
1/2 onion (chopped)
1/2 apple juice
olive oil
- In blender, blend all but onion, apple juice and oil
- saute onion in oil
- add blended mixture
- add apple juice let simmer for at least 1/2 hour. The longer the better!

Homeade Pizza & Pumpkin Pizza
Friday is always pizza night at the O house.  Everyone gets a little ornery when I try to change it up.  So as always, it will be pizza.  The kids use regular mozza on their pizza..I can appreciate that it just isn’t the same otherwise.
I am going to try this Pumpkin Pizza for myself, something new!
